Lime Crema
You may want to reach for that glass of ice cold water when you are eating something hot and spicy but did you know that dairy products, not water, is the better way to take the edge off the heat? This dish is a dairy based accompaniment for Mexican food. It stands out on its own as a dipping sauce or drizzle. It works particularly well if the dish contains chipotle peppers in adobo sauce such as chipotle chicken pizza. If you prefer a drizzle consistency, blend in a little buttermilk or cream.
The recipe is quite simple to make because the food processor does all the work for you. A rough chop works just fine. The only ingredient you will need to chop is the chives, since that will be used as a garnish for the sauce.

How to Make Lime Crema
Finely chop a small amount of chives to garnish. Roughly chop the cilantro, the rest of the chives and garlic.
Add all the ingredients except the chives, into a small food processor and blend until smooth.
Note: The mixture will have the consistency of sour cream. For a drizzle consistency, add a little buttermilk or cream. I prefer buttermilk since it gives the sauce a little tang.
Ingredients
- 1/2 cup sour cream
- 1/2 cup cilantro loosely packed
- 1 tbsp chives chopped
- 1 tbsp lime juice
- 1 clove garlic medium
- 3/4 tsp sugar
- 1 pinch salt
Instructions
- Roughly chop the cilantro, chives and garlic.
- Add all the ingredients except the chives into a small food processor and blend until smooth.
- Remove to a serving dish and garnish with chopped chives.
- Note: The mixture will have the consistency of sour cream. If you prefer a drizzle consistency, add a small amount of heavy cream or buttermilk.
