Goan Meatloaf

Easy authentic meatloaf recipe from Goa, India. Use leftovers to make meatloaf sandwiches.

Ingredients

  • lb lean ground beef
  • 1 medium onion
  • 1 small tomato
  • 1 tsp ginger garlic masala
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 egg
  • 1/2 cup chicken broth
  • 3/4 cup minute oats
  • 3-4 slices bacon

Instructions

  • Start by prepping the ingredients. Finely chop one large onion. Finely chop ½ tomato.
  • Place the chopped ingredients in the bowl, along with all the other ingredients. Note: If making the chicken broth, make sure it’s cooled enough to handle.
  • Mix completely and press into an un-greased glass dish. Press down and smooth over with the back of a spoon.
  • Top with bacon slices. 
  • Bake at 350F for 1 hour.
