Goan Meat Masala

Make a batch to have on hand for making many Goan recipes quickly. It can last in the fridge for months.

To air dry the spices: 12 hours

Ingredients

  • 2 oz cinnamon sticks
  • 1 oz cloves
  • 5.5 tbsp cumin seeds
  • 5 tbsp turmeric powder
  • 1/2 oz pepper optional or use less

Instructions

  • To maximize freshness, start with fresh whole spices bought in small quantities. Use whole spices for all the ingredients except turmeric.
  • Air dry the spices. For reference, my toaster oven's Airdry feature defaults to 125F for 12 hours.
  • Once the spices are dried, grind each one separately in a coffee grinder.
  • Mix the spices in the following proportions:
    7.5 tbsp cinnamon powder
    5 tbsp turmeric powder
    4.5 tbsp cumin powder
    2 tbsp clove power
  • Bottle the spices in an airtight glass container and store in the fridge to extend freshness.
  • Bag any left over spices separately and reserve for another use.
